I always brown my meats before putting in the crock pot as it helps seal in the juices. If it's a gravy meal like beef stew, I cut up the meat, heat up oil in a heavy pan and toss the meat until browned on all sides. I then add the onions and garlic (if used) and cook for a couple of minutes then, sprinkle flour and seasonings, toss again and then place in the crock pot with the vegetables, then add the gravy mix.
